Awesome protein from the hemp and sunflower seeds. I love really simple recipes that are fantastic! I forgot to write down exactly what I put into the icing, essentially cashews, vanilla, small splash of orange juice, pink salt, and coconut oil. That recipe to come! Cookies are great all by themselves though! Just had some extra cashews from a peachs and cream cheesecake I was making so I wanted to try it.
*Raw* Oatmeal Raisin Cookie Recipe:
2 c Raw Sunflower Seeds
1/4 c Raw Hemp Seeds
2 TBS Cinnamon
1 tea Nutmeg
Pinch of Pink Salt
Put into food processor until chunky, just to break it all up and blend the spices in evenly
5 oz Date Paste
1/3 c Agave
1/4 c Vanilla
1 c Raisins (add half with the Agave, Maple, Vanilla and Date, the other half with the Yacon)
1/8 c Maple
Process until holding together, the mix will be wet but make sure you don’t accidentally make it into butter. You want it to have that great chunky oatmeal feel.
1 TBS Yacon Syrup
Pulse a few times to get totally incorporated. Taste! If it seems like you want it to have more spice, add it! Or a little sweeter?! Add some agave and mix w your hands!
Portion out with an iced cream scoop, or whatever you have, into your hand. It’s real sticky and hard to work with, sometimes it helps to wet your hands a little bit. Make into little patties and set on your dehydrator trays. Dehydrate for 2 days, or until the right consistency for you. Remember, these are your cookies, make them how you want! Enjoy!
